When cooking, give your ox cheek plenty of time to tenderise the meat and maximise the richness of their flavour. Let the meat be the star of the show by cooking it in a delicate broth, or add some spice by cooking it in beef stock, soy, ginger, garlic and chilli. Whatever flavours you choose, ox cheek will benefit from a slow cook of two hours at the very least, four hours if you can and six hours for really spectacular results. Just make sure the liquid stays topped up and keep the temperature low.
