Bring the joint to room temperature, pat gently but thoroughly until completely dry. Preheat the oven to approximately 160-170°C and put the rolled rib in a deep pan with some oil and herbs (if required, the flavour really does speak for itself), cook for 50-80 minutes depending on if you would like your meat rare, medium or well done.
