Of all the muscles in the lamb carcass, the heart has without a doubt worked the hardest. This means it's dense and robust, but that needn't translate as tough or chewy. To ensure ultimate tenderness, braise your organic lamb hearts in a rich stock and flavoured with lots of garlic and rosemary. Cook in a low oven for two or three hours until the liquid is reduced and the heart is soft. Serve with vibrant wilted greens and creamy mash or polenta.
