When using your lamb bones to make stock (or broth – we don't mind which you call it) you can go minimalist (bones + water + heat), traditional (add a few woody herbs and some root veg) or avant-garde (chuck in whatever you fancy – garlic, ginger, chilli, fennel, spices). The really important part is giving it plenty of time so all of the flavour can be extracted from the bones and the connective tissues can dissolve away and fortify the liquid. Popping your pan in the oven and leaving it all night on the lowest possible heat is a fuss-free route to top-notch stock.
