The very best way to enjoy your fillet steak is cooked rare – this preserves the wonderful soft texture and delicacy of flavour and prevents the steak drying out with overcooking. Although the fillet is thick cut, you really only want to cook it for a minute or so on each side, letting it rest for five minutes afterwards to relax the meat and settle the juices.
